What is Culinary Arts?

Culinary Arts 2 is a second level course available to students who have passed Culinary Arts 1.  The course objectives include:  Food service management, menu planning, entrepreneur opportunities, and food production.  50% of the time the students will be working in local restaurants and in the Buc Stop Café at school.  Restaurant work will begin the middle of February.   They will be taken to their job sites on the yellow school buses.  Students are not permitted to drive themselves to their job sites.  They will be in class for 2 blocks each day (3 hours) and receive 2 credits in June. 

 

Buc Stop Cafe

25% of the grade is planning and working in the “Buc Stop Café”.  This is a class run café for staff only that will be open every Wednesday. 

 

Grades will be based on the following:

Restaurant work/ Participation in after school functions (each student is required to work 2 events)

Test/quizzes

Class/lab participation/daily work

Café work

 

Appropriate dress for restaurant work and café work:  Close toed shoes, minimum jewelry, head covering and chef jacket (provided if needed).   The chef jacket will be your responsibility to keep clean.  Failure to dress appropriately will result in a 0 for that restaurant day.

 

Absences:  Excused absences may be made up.  For excused absences on restaurant days or café days you may choose from a list of make up work options.  Unexcused absences result in a 0.

 

Lab:

We will periodically have cooking labs in which the students will be able to practice different techniques we have learned about in class.  In order to be eligible to participate in labs, students must exhibit good classroom behavior.  If a student does not behave appropriately in class they will not be allowed to participate in lab. 

 

I have read this syllabus and understand that it is my responsibility to make up work missed.  I understand that if I have an unexcused absence or show up inappropriately dressed that I will receive a 0 in the grade book for that day.
